Baked Artichoke Dip
Preheat oven to 400 degrees
Stir together:
1 cup mayonaise
1 cup parmesan cheese
1/2 cup chopped onion
Pulse
in food processor until finely chopped: 1 can (13 oz can) artichokes
(well drained)
Stir in: 1 Tbsp fresh lemon juice or dry white wine into cheese mixture along with 1/4-1/2 tsp. ground black
pepper
Place: in baking dish.
Combine and sprinkle over dip:
3 Tbls. bread crumbs
1 tsp olive oil
Bake until top is browned, about 20 min. Serve w/crackers or toast.
You
may add a 3 oz. can of green chilis and jar of pimento
(drained well) to the artichokes,
