This is the finished product.  Delicious.


THIS MAKES A GOOD  EASY MEAL FOR THOSE TIMES THAT A FULL MEAL ISN'T NECESSARY.
TOAST SOME BAGELS,  ENGLISH MUFFINS OR ANY KIND OF BREAD.
ENJOY!!!!

ZUCCHINI,  SCRAMBLED EGGS & CHEESE

ONE ZUCCHINI  -  SLICE LENGTHWISE
TAKE OUT THE MIDDLE OF THE ZUCCHINI AND  THROW  AWAY
 DICE UP THE REST OF IT
 
1STICK BUTTER
1DICED ONION
ZUCCHINI DICED
 
FRY IN SKILLET UNTIL IT IS TRANSLUCENT OR SOFT, THEN ADD YOUR EGGS AND SCRAMBLE THEM TOGETHER

WHEN IT IS ALMOST DONE PUT ABOUT 4 SLICES  OF AMERICAN CHEESE AND LET IT MELT
 
THE AMOUNT OF EGGS YOU USE IS UP TO YOU
A helpful hint!!!  When you have to peel your zuccini and onions put  two paper towels down where your  drawer is.  When you are finished with your mess, take a plastic bag from the grocery store;  open the drawer;  place the bag over front of drawer   & then close the drawer .  It will hold the bag in place and you will have two hands to slide the garbage in to the bag.  Tie it up and throw it away
