Deer Hachis Parmentier
Deer Meatloaf (The French Way � You can also substitute a standard
meatloaf mixture)
(Jacques Parmentier was the man who introduced
potatoes into France)
1 lb of Ground Meat (Preferably Deer) (A mixture of
ground beef with a small amount of ground pork is a good substitute)
� lb. of Carrots
� lb of Red Potatoes - Milk
1 onion - Chopped
� bulb of garlic (May need less for standard meatloaf mixture. Depends
on your taste)
Salt , Pepper, Italian Seasoning, Parsley, 2 Bay Leaf,
3 tbsp of Olive Oil
1 Egg
1 bag of Swiss Cheese
Peel Carrots & Potatoes.
Boil carrots & potatoes with a little salt & bay leaves. Remove bay
leaves. When they are soft, mash them all together. Add � bag of Swiss
cheese and enough milk to make a nice mashed potato � carrot mix.
Mix meat with onion, garlic, olive oil, salt ,
pepper, Italian seasoning, parsley and egg. Mix Well.
Saut� in pan until meat is cooked but crumbly.
Mix the cooked meat and mashed potatoes together..
Shape like a meat loaf on a baking/ serving plate.
Cover with the rest of the Swiss cheese .
Broil in the oven until the cheese is melted and
nicely brown
Serve with a nice, mixed green salad with a vinaigrette dressing.
Vinaigrette Dressing
2 spoons of Dijon mustard
Salt & pepper to taste
Juice of � lemon
2 garlic clove - chopped fine
4 tbsp olive oil
Mix until creamy
