Chicken with Peach Salsa From Pam In Tennessee

 CHICKEN WITH PEACH SALSA
 Vegetable cooking spray
 1/2 cup chopped onion
 1/2 cup peach preserves
 1 tablespoon cilantro
 1 teaspoon minced fresh ginger
 1/4 teaspoon salt
 1/8 teaspoon pepper
1 (14!/2 ounce) can whole tomatoes, drained and chopped
 1 medium peach diced about 2/3 cup
 1 (3 inch) cinnamon stick
 6 boned skinned chicken breast halves
 3 cups of hot cooked rice

 Coat a medium pan with cooking spray.  
Over medium heat, add onion, stirring constantly.  cook 3 minutes.  
Add preserves and  next 7 ingredients bringing to a boil. 
Reduce heat and simmer 20- 30 minutes.  It will thicken.  Stir often.
Remove and discard cinnamon  stick. 
 
Set salsa aside, keeping warm.

 Grill chicken covered over medium heat 5-7 minutes per side or until done.

 Serve chicken and salsa over cooked rice.  serves 6
