HARRIET CROZIER'S SALMON WITH BABY VEGETABLES IN DILL SAUCE

Salmon with Baby Vegetables in Dill Sauce - Harriet Crozier 

1 - to 2 pounds fresh salmon filets

Place filets in greased 9X13-inch baking pan.  Bake in a preheated 400o oven for 30  to 40 minutes or until fish flakes easily with fork.

 1 package (16ounce) Birds Eye Baby Pea Blend  cooked according to package direction. ( don't cook all the way, like our vegetables a little crunchy)

 

Dill Sauce: 

3 tablespoons melted butter     
3 tablespoons flour
1  cup milk      
1 teaspoon salt
Pinch black pepper
 2 tablespoons grated onion
1 tablespoon lemon juice   
 1 teaspoon lemon zest (optional)
1 tablespoon fresh dill, chopped

 

Dill Sauce:  In small saucepan, heat butter; add flour and whisk until smooth.  Add milk, salt and pepper stirring constantly until mixture is thick and smooth.  Stir in onion, lemon juice, zest, dill and vegetables.  Transfer salmon to large platter and top with sauce.  Serves 6
